There’s been some fantastic meals created recently in our weekly Cook and Eat sessions with lots of fresh organic produce from the gardens.

This has included:

Foraging for fresh nettles to make nettle hummus to accompany homemade soda bread. This is a fantastic quick and easy bread to make requiring no yeast or proving! We also made beetroot hummus, white bean Mediterranean dip and a fresh rocket, sorrel, herb and edible flower salad gathered from the garden….delicious!

Roasted vegetables and herby couscous with wild garlic. To accompany this we made a fabulous salad completely picked fresh from the garden….delicious (and so colourful!)

Wild garlic pesto and pasta with another fantastic garden grown salad. We also harvested the first of our broad beans to supplement a few spears of our own asparagus!

Spinach, feta and broad bean spanakopita using veg and herbs and a lovely side salad from the garden. It tasted delicious.
